Easy Restaurant Style Salsa

  • 1 can (15 oz or 425g) diced tomatoes with juice (preferably fire roasted)
  • 1 can (10 oz or 283g) Rotel
  • ¼ cup chopped onion (optional)
  • 1 clove garlic, minced (optional)
  • ½ fresh jalapeno, diced
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ cup cilantro (coriander)
  • 2 tablespoons lime juice
  1. Place all ingredients into a blender or food processor and pulse 5-7 times.
  2. Chill for 15 minutes and serve with tortilla chips.

Depending on your preference, you can use the original Rotel which is spicy or the mild one which is less spicy. If you cannot find Rotel at your local grocery store, it's available on amazon.com or you can just use two cans of diced tomatoes (preferably fire roasted) and add more fresh jalapenos if you want it spicier.

For those who don't eat onions and garlic, I have also made it without and it tastes just as good.

If you prefer a chunky salsa sauce, pulse it in the blender for only 3-5 times or if you prefer a smooth sauce, keep pulsing until you achieve your desire.
