This colorful fresh mango salsa is amazingly delicious and so easy to make. It’s sweet and spicy with a hint of lime that’s so refreshing on a hot summer day!
On days when I don’t feel like cooking, I make this salsa and just eat it on its own for a quick lunch or have it with some sweet potato chips. It takes less than 10 minutes to make!
Since I came back from my Asia trip, I felt like my body needed a cleanse from over eating all those amazing food and desserts! What makes this fresh mango salsa so healthy is the combination of mangoes, tomatoes and lime juice. 1 cup of diced mangoes alone contains 100% of the daily need for Vitamin C. I always like to combine foods with Vitamin C in any meal, especially raw food because the Vitamin C helps absorb the nutrients, particularly iron from other foods.
I’ve had this mango salsa in tacos and nachos with guacamole and black beans, in a tofu wrap and even in a burrito bowl. It’s so delicious and healthy!

Mango Salsa
Ingredients
- 1 mango washed, peeled and diced
- ¼ cup cilantro coriander
- 1 tomato washed and diced
- 1 cucumber washed, peeled and diced
- Half jalapeno quartered lengthwise and thinly sliced
- ½ lime juice
- Pepper to taste
- Pinch of salt
Instructions
- Add all ingredients into a serving bowl and toss to mix.
- Serve immediately!
